Chocolate Florentines

Hey everyone, welcome back to my hobbies and leisure blog focusing on Italian Cooking, Rosa’s in the Kitchen. Today I wanted to share with you all a recipe passed down to me from my mother, and from her mother to her; Florentines. These are a small cookie normally baked around Christmas, but best enjoyed all year round in the presence of family and friends. You will need:

1 ¾ cups almonds

3 tablespoons flour

Zest of one orange

¼ tablespoon salt

¾ cup sugar

2 tablespoon heavy cream

2 tablespoons corn syrup

5 tablespoons unsalted butter

½ tablespoon vanilla extract

4 ounces semisweet chocolate, chopped

Ok, let’s get started!


  1. Heat the oven to 350 fahrenheit and line a baking sheet with parchment paper
  2. Pulse the almonds in a food processor until finely chopped then mix with flour, zest and salt in a bowl
  3. Combine sugar, cream, corn syrup and butter in saucepan. Cook until a rolling boil and sugar dissolves. Remove from heat and add vanilla, then pour mixture into almond mixture and stir to mix
  4. Scoop round teaspoons of batter and roll into balls. Place on baking sheet leaving room to spread
  5. Bake one pan at a time for about 10-11 minutes or until an even golden brown colour throughout. Cool on baking sheet for five minutes then transfer to racks
  6. Put the chocolate in a heatproof bowl, and bring a pot of water to a boil. Set the bowl over the water and stir the chocolate until melted. Drizzle melted chocolate over cookies and let them dry until the chocolate is set
